i have had some that are really good at a cafe. They are filled with cheese and onion. I am not sure if maybe they are using condensed cheddar cheese soup, or maybe cheese whiz, and maybe sour cream. What do you think ? Does any one have a recipe that may be similar to this that is tried and true? The top just seems to have cheese on it.
There is no olives, tomatoes, peppers, or enchilada sauce in it.
I do not like the red or green sauce. So, please no recipes with these ingredients.
Thanks to all.|||look in the deli section in the cheese area of walmart or any grocer that carries Mexican foods its called Mexican dipping cheese,,just melt that over the enchiladas , if it seemed a little like it had sour cream?? then check in dairy for Mexican crema it is like sour cream and you can use it if you cant find crema but the mexican version is slightly different, if all else fails just try some jack cheese and sour cream the cheese inside is more than likely jack or the Mexican cheeses ,if you are lucky enough to have a mexican grocery near by ask them to help you find what you need|||Ok I this is not traditional, but it works great....

warm up a can of cream of mushroom or cream of chx soup, dip your corn tortilla in it then put shredded cheese and diced onions in roll it up, and put seam side down into a casserole dish, when you have the dish full, put a bit more shredded cheese on top and just a few more onions, bake for about 20-30 min covered 350 oven then remove cover and bake untill it is the color you like, we like golden brown cheese on top at our house.|||sounds like you want tortillas filled with cheese, with sour cream on top. well you can make them easily. dip the tortillas in hot oil, place cheese blend and minced onion in the middle, roll the tortilla laying in flat with the crease on the underside, place on a baking sheet, cover with foil so yoku dont burn the top- bake for 8-10 minutes, until cheese is melty and gooey. You can also sprinkle some cheese on the top of them before baking. take them out of the oven top with some sour cream, and voila!


if you would like them a little more moist, you can take 1/4 cup milk, 1/3 cup cheese, black pepper to taste, and simmer that in a pot to make you cheese sauce.|||Cheese Enchiladas


Ingredients:
2 cupsShredded Monterey Jack cheese (8 ounces)
1 cupShredded Cheddar cheese (4 ounces)
1Medium onion, chopped (about 1/2 cup)
1/2 cupSour cream or plain yogurt
2 tablespoonsChopped fresh parsley
1/4 teaspoonPepper
6Flour tortillas (7-inch diameter)
1 can(15 ounces) tomato sauce
1/3 cupChopped green bell pepper
1 tablespoonChili powder
1 teaspoonChopped fresh or 1/2 teaspoon dried oregano leaves
1/4 teaspoonGround cumin
1 cloveGarlic, finely chopped
1/4 cupShreeded Cheddar cheese (1 ounce)
For Garnish (if desired):
Sour cream
Sliced black olives
Lime wedges
Preparation
Heat oven to 350 degrees. Grease rectangular baking dish, 12x7 1/2x2 inches. Mix Monterey Jack cheese, 1 cup Cheddar cheese, the onion, sour cream, parsley and pepper. Spoon about 1/2 cup cheese mixture onto each tortilla. Roll tortilla aound filling and place seam side down in dish. Mix remaining ingredients except 1/4 cup Cheddar cheese. Pour over enchiladas. Sprinkle with 1/4 cup Cheddar cheese. Bake uncovered about 20 minutes or until hot and bubbly. Garnish with sour cream and sliced black olives or lime wedges if desired|||ITS NOT GOOD WITHOUT SAUCE!!!! thumbs up or what?|||what you are having at the cafe is not an enchilada, its cream and cheese, o and if youu want areal enchilada, you add chiken, and the real sauces. just add your chees, parmesan, and cream, melt it, fry the tortillas and the chiken,
