With corn tortillas please.|||Allow 2 or 3 enchiladas per person. Corn oil for frying tortillas in skillet. One or 2 cans enchilada sauce [heat in saucepan while you fry each tortilla]. Shredded yellow [cheddar type] cheese, chopped white onions, pitted black olives. Price for these should be right around $20 [omit olives to be sure]. You'll need about 1-1/2 lbs cheese, 18 tortillas, 1 large white onion, 1 can black olives, 2 cans enchilada sauce. Price it out on the internet [try supermarkets online like Kroger's]. Note: go for cheapest yellow cheese that isn't that plastic junk like "American" or Velveeta...imported Mexican cheese is v. expensive, so settle for store brand cheddar or longhorn. Shred it yourself too. Enchilada sauce brands include El Pato, Rosarita. Try for one large can and add a little tomato juice to extend it if the $$ are getting to the end zone.|||Yes you can.. You might even get to put more mexican stuff in it.. Cheese normally costs about 4.50${mexican cheese}. Try to get some cheese that is mexican to give it a mexican taste. Tortillas can range from a 2.30$-3.50 depending on how many tortillas you want.. For the hot side, get some dryed peppers colored red.. The cost from 1.00-2.00$ at any mexican store.. You might want to add some tomatoes on top of the enchilidas and some lettuce..
