There is an AMAZING Cuban restaurant in Louisville, Ky and they have a dish that is superb. Its Chimichurri Steak. It comes with a green sauce and a red sauce. I know the green sauce is a traditional Chimichurri sauce but I'm not sure about the red one. I'm looking for a similar recipe. I moved 1600 miles away and have found NOTHING like it. Any help would be amazing, websites are welcome as well.|||I couldn't find anything similar but you can try this..

Red Pepper Chimichurri

3 tablespoons kosher salt
1 cup warm water
2 bunches Italian flat leaf parsley
6 cloves garlic
1 cup extra-virgin olive oil
1 cup roasted red peppers, coarsely chopped
2 tablespoons sweet paprika
2 tablespoons chopped fresh oregano
1 tablespoon crushed red pepper
1 teaspoon ground black pepper
1/2 teaspoon ground cumin
1/2 cup distilled white vinegar
2 tablespoons red wine vinegar

Whisk together the kosher salt and warm water until the salt dissolves, set aside and allow to cool to room temperature. This is called the salmuera.

Combine the flat leaf parsley, garlic, and olive oil in the bowl of a food processor, and pulse several times to chop up the parsley. Add the roasted red peppers, paprika, oregano, crushed red pepper, black pepper, cumin, white vinegar, and red wine vinegar. Continue to pulse the food processor until the ingredients are well combined, but still chunky.

Transfer the sauce into a large mixing bowl, and slowly stir in the cooled salmuera. Cover and refrigerate for 2 hours to allow the salt to mellow. Sauce can be kept refrigerated in an airtight container for 2 weeks.

Marinated Steak with Chimichurri Sauce

cup A.1. Garlic & Herb Marinade
1 beef flank steak (2 lb.)
2 cups fresh parsley sprigs
1/3 cup olive oil
2 Tbsp. red wine vinegar
1 bay leaf
1 tsp. dried oregano leaves

POUR marinade over steak in shallow dish; turn to coat both sides of steak. Refrigerate 30 min. to marinate. Meanwhile, blend remaining ingredients in blender until smooth. Pour into bowl; refrigerate until ready to serve.

HEAT broiler. Remove steak from marinade; discard marinade. Place steak on rack of broiler pan sprayed with cooking spray.

BROIL, 4 inches from heat, 10 min. or until steak is medium doneness, turning after 5 min. Diagonally cut steak across the grain into thin slices. Serve with parsley mixture.
