Years ago, Van de Kamps offered frozed Mexican Dinners...I'm looking for a Cheese Enchilada recipe similar to the Van de Kamps. It had finely chopped black olives and the cheese had a thick Cheese Whiz consistency.|||1 pkg. enchilada shells
1 chopped onion
2 cans cream of chicken soup
6 tbsp. Cheese Whiz
1 can water
1 pkg. grated cheddar cheese

Cool and pick off bone. Place side by side in cake pan. Heat up soup, Cheese Whiz and water, then pour over enchiladas. Sprinkle cheese over the top. Bake for 30 minutes at 350 degrees|||4 C. Monterey Jack cheese, shredded
2 C. cheddar cheese, shredded
2 medium green onions, chopped
1 C. sour cream

I mix these ingredients together and put some in a flour tortilla. Then pour enchilada sauce over them. Then a layer of the cheese and chopped olives. I set it in the fridge for a few hrs. Bake covered til bubbly.
